Jordan Cabernet Sauvignon 2007 is produced by the Jordan Family from their vineyard in the Stellenbosch region of South Africa. Fermented in stainless steel but matured for 18 months in French oak barrels. It is only lightly pressed to produce an intense and full-flavoured wine, full of ripe berry flavours, balanced by soft, ripe tannins and a rich toasty and long finish. Drinking well now but will improve with aging - if you can leave it alone!! Well worth it's price tag. The wine was fermented in stainless steel fermenters with pump-overs 3 times a day. There was also an extended maceration on the skins after the fermentation. The wine was racked into barrels for malolactic fermentation. After further racking it then spent 20 months in used and new French oak barrels, was lightly filtered and then bottled.
