The Wairau vineyards are planted on the Southern Clay's heavier soils and these soils provide the body and the structure to the final blend. The Awatere Valley vineyards are planted on gravelly free draining soils and due to the cooler nature, these sites offer the wine, pungent notes of nettle, gooseberry, citrus and pea pod. The vines are all managed intensively with the levels of thinning of the crop and shoot needed to limit yield and maximize quality. In order to capture the freshness of the grapes, individual vineyard parcels are picked and transported to the winery for immediate crushing. Fermentation is carried out at cool temperatures and, after completion of fermentation the juice is left on the lees to gain richness and complexity.
