Vineyards and Vinification

All of the grapes were sourced from Casa del Bosque’s own vineyards - located within the coolest, most western reaches of the Casablanca Valley. The wine is a blend of three different clones of Sauvignon Blanc (69% clone 1, 27% clone 242 and 4% clone 107) from vines ranging in age from nine to nineteen years old. The fruit is grown on two different soil types within the vineyard , 95% from a clay loam and 5% from a red clay that is mixed with decomposed granite. The blocks used in this blend were cropped at an average of 7 tonnes per hectare (2.8 t/acre). The grapes were carefully mechanically harvested at night, with ambient temperature between six and ten ºC (43 to 50ºF) between March 8th and April 16th, 2012 On arrival at the winery all of the fruit bunches were first destemmed and then crushed and pumped to stainless steel tanks (via a refrigerator in order to reduce the temperature to around five ºC (or 41ºF) where they were then left to soak for sixty four hours. Following this long period of soaking the free-run juice was gravity drained by from the tanks. The remaining skins and juice were then removed from the tanks and gently compressed using pneumatic presses in order to separate light from hard pressings. The resulting liquor was then left to cold settle (at around 10ºC/50ºF) for four days following which time ninety three per cent of the blend was racked to stainless steel tanks, dosed with selected yeasts and ultra-cool fermented (reaching temperatures as low as 6.5ºC/44ºF at the peak of the fermentation). Following fermentation, the wine was aged for two months on gross lees (without stirring) before blending. The remaining 7% of the blend was fermented with selected yeasts in 4th and 5th use French oak barrels with temperatures peaking at twenty two ºC/72ºF. Post fermentation the barrels were stirred every week in order to encourage the lees to break down thus enhancing the texture or mouth-feel of the wine. After two months the barrel component was blended with the tank fermented component, cold stabilised, filtered and bottled.


Chief Winemaker at Casas del Bosque, Grant Phelps originally trained in oenology and viticulture in his native New Zealand, and first cut his teeth as a Pinot Noir specialist flying between Oregon and New Zealand in the mid 1990's. This was followed by several intense years working as a flying winemaker in the Loire Valley, Hungary, Australia, California and Argentina before finally arriving in Chile to make wine. That was in 2001 and now, thirteen harvests later Grant has firmly established himself as one of Chile's leading cool climate winemakers.
