Casas Del Bosque Reserva Cabernet Sauvignon has a deep ruby red colour with lifted notes of dark cherry, coffee and plum on the nose. On the palate it is full of blackcurrant, cinnamon and nutmeg. It is rich and elegant with well balanced tannins giving a great structure and a lovely long finish. The grapes for this wine come from 7 different vineyards within the Rapel region (Colchagua and Cachapoal Valleys) and from vines ranging in age from twenty five to a hundred years of age. They are planted on vertical shoot positioned trellis with a density averaging 3333 vines per hectare. The vines were not leaf plucked which means the grapes were left to ripen slowly and maximise their potential. The grapes were then hand harvested, crushed and de stemmed and transferred to stainless steel tanks. It was fermented for 15 days with temperatures up to 33 degrees. After fermentation the wine was left on the skins for an extra five days to extract the maximum flavour and colour. After pressing the wine was kept in French oak barrels for ten months. During this time it was racked in spring after the malolactic fermentation and then again shortly before it was bottled.
