The grapes are picked by hand whilst still cold and make it to the tank 10 minutes after being picked. A pneumatic press and cool fermentation is used to capture all the fruit flavours and exotic aroma that Sauvignon has to offer. ChÆ’teau de Claribes Sauvignon Blanc 2006 is fresh, very clean on the palate and has a very balanced level of acidity.
