Bacalhoa Moscatel de Setubal Vinho Generoso is made from Moscatel de Setubal grapes, from a single vintage, grown in vineyards located on the calcareous rocky hills near Arrabida. After a short fermentation, selected wine brandy is added and the fortified wine macerates on skins for five to six months. After pressing the skins the wine is fined and filtered. It is then aged for eight years in small barrels placed in a small warehouse, which allows natural, wide temperature variation. This, combined with a small volume of each barrel provokes an intense concentration in flavour and aroma.
